What is Bacterial Contamination?

Contamination simply means that something has moved into our food that shouldn't be there. When we talk about bacterial contamination, we mean that harmful bacteria (often called pathogenic bacteria) have hitched a ride onto our food. You can’t see, smell, or taste these bacteria, which is why they are so sneaky!

Cross-contamination is a key term to remember. This is the transfer of bacteria from a contaminated source (like raw meat) to a "clean" food (like a sandwich) that is ready to eat.

The "Big Five" Bacteria

For your exam, you need to know these five specific bacteria. Think of them as the "most wanted" list of food safety:

1. Campylobacter

This is currently the most common cause of food poisoning in the UK.

Main Sources: Mainly found in raw or undercooked poultry (chicken, turkey), but also in untreated milk and dirty water.
Top Tip: Never wash raw chicken! The water droplets can spray Campylobacter all over your kitchen surfaces.

2. Salmonella

Probably the most famous bacteria on the list!

Main Sources: Found in raw poultry, untreated milk, and raw eggs.

3. E. coli (Escherichia coli)

Many types of E. coli are harmless, but some can be very dangerous.

Main Sources: Found in the intestines of animals. It usually gets into our food via raw beef or through dirty water/unwashed vegetables that have been in contact with animal waste.

4. Listeria

Listeria is a bit of a "tough guy" because, unlike most bacteria, it can actually grow in cold temperatures (like inside a fridge).

Main Sources: Soft cheeses (like Brie or Camembert), pâté, and ready-to-eat chilled meals.

5. Staphylococcus aureus

This one is unique because it is usually carried by us – the food handlers!

Main Sources: It lives on human skin, in our noses, and in infected cuts or spots. It gets onto food when we touch our faces or hair and then touch food without washing our hands.

Where does Contamination come from? (Sources)

Bacteria don't have legs; they need a "vehicle" to move around. Here are the five main ways they travel:

1. Other Raw Foods: This is the biggest risk. Raw meat, poultry, seafood, and even unwashed vegetables carry bacteria naturally. If they touch "ready-to-eat" foods, the bacteria jump across.
2. Work Surfaces and Equipment: Using the same chopping board for raw meat and then for bread is a recipe for disaster. Dirty knives and cloths also spread germs.
3. Food Handlers: Humans are covered in bacteria. If we don't wash our hands, or if we cough or sneeze over food, we contaminate it.
4. Pests: Flies, rats, mice, and cockroaches carry bacteria on their bodies and in their droppings. A fly landing on your cake can leave behind thousands of bacteria!
5. Waste: Rubbish bins are full of decaying food and bacteria. If bins aren't covered or if you don't wash your hands after touching a bin, you can spread contamination.

What happens when we get Food Poisoning? (Symptoms)

Don't worry if you find the medical names confusing; for your AQA exam, you just need to know the general symptoms. Most food poisoning bacteria cause similar "tummy trouble."

Common symptoms include:

- Nausea (feeling like you want to be sick)
- Vomiting (being sick)
- Diarrhoea
- Stomach cramps/pain
- Fever (high temperature and shivering)
