Have you ever looked at your dinner and wondered exactly how it got to your plate? Food provenance is the study of where food comes from and how it is produced. In this chapter, we are looking at the very beginning of the journey: how food is grown, reared, and caught.

Understanding this helps us make better choices about what we eat, considering things like animal welfare, the environment, and the cost of our weekly shop. Don't worry if some of the terms seem new—we will break them down step-by-step!

1. Growing Ingredients: Fruits, Vegetables, and Cereals

Most of the plant-based food we eat starts as a seed in the ground. These are known as grown ingredients.

How they are grown:

Farmers prepare the soil, plant seeds, and ensure the plants have enough water and nutrients to grow. When the plant is ready, it is harvested. Harvesting can be done by hand (like picking delicate strawberries) or by large machines (like combine harvesters for wheat).

Conventional vs. Organic Farming

There are two main ways farmers grow crops:

1. Conventional Farming: This method uses intensive techniques. Farmers often use chemical fertilisers to help plants grow faster and pesticides to kill insects that might eat the crops. This usually results in more food (high yield) at a lower cost.

2. Organic Farming: Organic farmers avoid using synthetic (man-made) chemicals. Instead, they use natural fertilisers like manure and "natural" ways to control pests, such as ladybirds to eat aphids.

2. Rearing Ingredients: Meat and Poultry

3. Catching Ingredients: Fish

Fish and shellfish are caught ingredients. There are two main ways we get our fish:

Wild Caught

This is when fish are caught in the open sea or rivers using nets, pots, or lines. However, we have to be careful about overfishing, which is when we catch fish faster than they can reproduce. To help this, we use sustainable fishing methods, such as using nets with larger holes so small, young fish can escape and grow up.

Fish Farming (Aquaculture)

Just like we have farms on land, we have "farms" in the water! Fish like salmon and trout are often raised in large tanks or cages in the sea or lakes. This is a sustainable way to provide fish without depleting the wild population in the oceans.

4. Genetically Modified (GM) Foods

Sometimes, scientists change the "instructions" (DNA) inside a plant to give it special features. These are called GM Foods.

The Pros (The Good Stuff):

- Pest Resistance: The plant can be modified so it is naturally poisonous to certain bugs, meaning farmers use fewer chemical sprays.
- Higher Yield: Plants can be made to grow bigger or faster, providing more food for the world.
- Tougher Crops: Plants can be modified to survive in very dry or very cold places where they wouldn't normally grow.

The Cons (The Concerns):

- Environmental Impact: Some people worry that "modified" pollen could spread to wild plants and change the ecosystem.
- Long-term Health: Some consumers are worried because we don't yet know the 100% certain long-term effects of eating GM foods.
- Ethics: Some people feel it is unnatural to "tinker" with the DNA of living things.

5. Primary Processing: From Field to Factory

Once food is grown, reared, or caught, it undergoes primary processing. This is the first stage of turning a raw ingredient into something we can eat or use for cooking. It makes the food safe and ready to be sold.

Examples of primary processing include:

- Harvesting and Cleaning: Washing soil off vegetables or removing outer leaves from a cabbage.
- Milling: Crushing wheat grains to turn them into flour.
- Heat Treatment: Milk is primary processed using Pasteurisation. This involves heating the milk to kill harmful bacteria so it is safe to drink.
- Slaughtering and Butchery: Preparing meat from reared animals so it is ready to be cooked.
