Moist cooking methods use water, stock, milk, or steam to transfer heat to food. Because liquids circulate, heat spreads evenly.

Poaching
A very gentle method where food is submerged in hot liquid maintained at a low temperature (approx. \(70^\circ\text{C}\text{–}80^\circ\text{C}\)) with no bubbling.
Best used for: Delicate items like whole eggs, tender fish fillets, and soft fruits (e.g., pears).

Steaming
Cooking food using the vapour rising from boiling water, without letting the food touch the water directly.

Nutritional Advantage: Steaming is one of the healthiest cooking methods. Because the food is not soaked in water, water-soluble vitamins (such as Vitamin C and the B-group vitamins), natural flavours, and vibrant colours are preserved.
Blanching
Plunging food into rapidly boiling water for a very short time (seconds to minutes), then immediately transferring it into iced water (a step called refreshing).
Why we use it: It stops enzyme action, sets the bright green colour of vegetables, softens them slightly, and prepares food for freezing or rapid final cooking.
Stewing and Braising
Slow, covered cooking methods using small amounts of liquid over low heat for an extended period.
Best used for: Tough, cheaper cuts of meat rich in connective tissue (collagen), and root vegetables.
How it works: Over time, the gentle heat slowly breaks down tough collagen into tender gelatin, creating a rich, flavourful gravy.
