  • Saturated Fatty Acids: These have no double bonds between carbon atoms. Think of them as being "saturated" or "full" of hydrogen. They are usually solid at room temperature (like butter).
  • Monounsaturated Fatty Acids: These have one double bond in their structure.
  • Polyunsaturated Fatty Acids: These have two or more double bonds.

B. Classification by Physical State

  • Fats: Usually solid at room temperature (e.g., lard, butter). They usually contain more saturated fatty acids.
  • Oils: Usually liquid at room temperature (e.g., corn oil, olive oil). They usually contain more unsaturated fatty acids.
  • Hydrogenation: This is a chemical process used in food industry to turn liquid oils into solid fats (like margarine). Warning: This process often creates trans fatty acids, which are bad for heart health.

C. Classification by Dietary Source

  • Animal Sources: Butter, lard, fatty meat, cream, and egg yolks.
  • Plant Sources: Vegetable oils (like canola or soy), nuts, seeds, and avocados.

3. Functions of Lipids

Why do we need to eat lipids? They serve several essential roles in the body:

  • Feeling of Fullness: Lipids take longer to digest, helping us feel "full" (satiety) after a meal.

4. Lipids in the Diet and Health Issues

Not all lipids affect our bodies the same way. We need to be careful about the types of lipids we choose.

A. Cholesterol: The Good and the Bad

Cholesterol is a soft, waxy substance found in the body. It travels through the blood in "packages" called lipoproteins:

  • LDL (Low Density Lipoprotein): Often called "Bad Cholesterol." It carries cholesterol to the arteries. If there is too much, it can build up and block blood flow, increasing the risk of heart disease. (Memory aid: L = Lousy).

B. Trans Fatty Acids

D. Unsaturated Oils

Replacing saturated fats (like lard) with unsaturated oils (like olive or sunflower oil) is generally recommended to help maintain healthy cholesterol levels.
