A. Salmonellae (Salmonella)
Sources: Found in the intestines of animals and humans. It is often spread through "cross-contamination."
Associated Foods: Poultry (chicken/turkey), eggs, raw milk, and undercooked meat.
Symptoms: Fever, headache, abdominal pain, diarrhea, and vomiting.
B. Escherichia coli (E. coli)
Sources: Found in human and animal faeces. It usually gets into food through dirty hands or contaminated water.
Associated Foods: Undercooked ground beef (like burger patties), unpasteurised milk, and contaminated raw vegetables.
Symptoms: Severe stomach cramps and bloody diarrhea. It can be very serious for young children and the elderly.
C. Vibrio cholerae
Sources: Primarily found in water contaminated by human waste. It causes the disease known as cholera.
Associated Foods: Raw or undercooked shellfish (oysters, clams) caught in polluted water, or food washed with contaminated water.
Symptoms: Very severe, watery diarrhea (often called "rice-water stools"), rapid dehydration, and vomiting.

- E. coli = Eating undercooked burgers.

Symptoms: Dizziness, nausea, sweating, and blurred vision shortly after eating.
B. Ciguatera Fish Poisoning (CFP)
Sources: This toxin is produced by tiny algae in coral reefs. Small fish eat the algae, and big reef fish eat the small fish. The toxin builds up in the big fish (this is called bioaccumulation).
